Gooey peanut butter and banana sandwich

I’ve kinda sorta been all about peanut butter these days. I eat it with my apples, on my sandwiches, in my protein shakes, in my chocolate. I’ve even had it in my coffee sometimes (?!). Weirdo! Anyway, I made this today because I think regular peanut butter and banana sandwiches are the bomb so why not grill that ish up and make it even better? One bit of warning before you eat this, it’s super rich and gooey and you probably won’t be able to utter a sentence while you chew, so eat it alone in a dark corner where no one can see you, or just pretend to be the silent type if you’re in the company of other humans.

Some musical accompaniment to your pb sandwich: Sublime’s “Badfish” — reminds me of college days, summer bonfire nights, and all around good and albeit “fuzzy” memories…

Gooey peanut butter and banana sandwich

Makes 1

2 slices bread, your choice (I used whole wheat)

Creamy peanut butter

1/2 banana, cut lengthwise into 4 thin pieces

2 tablespoons butter, melted

Cinnamon sugar

Raspberry jam, or any other fruity jam, for dipping (optional, but oh so good)

I feel super lame for telling you how to make a sandwich but here goes: Grab your sandwich bread and slather with a healthy dosage of peanut butter. Layer the banana slices on one side and close the sandwich. Spread melted butter on both sides of sandwich and sprinkle with cinnamon sugar. Get a fry pan and set it over medium heat. Put the sandwich on the pan when it’s hot and let it get golden brown and melty on both sides, about 5-7 minutes. Cut in half and dip in jam.
