Who says leafy greens can’t be delightfully scrumptious? You? No. Me? No way! If you ask me, a luscious mound of baby lettuce leaves beneath a radiantly golden egg, dressed with the most piquant ranch dressing your little taste buds have ever had the fortune to come across is absolute gastronomic heaven.
I do not lie, folks.
Neither am I a crook. Sorry, I couldn’t help myself.
This dish is my interpretation of healthy salad meets…not-so-healthy salad. Kind of like when Harry Met Sally, but in food form. Sort of.
‘Cus, you know, the mache leafy greens are full of vitamins and stuff. Plus, they’re real delicate and fancy looking, which make you (the hostess with the mostess. Er. I mean, the hostest with the mostest. Hm. Well, whatever, you know what I mean) uber awesome when you present this to a crowd. Or yourself. Like I did.
The crispity, crunchety egg on top is the crown jewel of this salad, of course. She reigns above all else. And the vivaciously bold dressing ties everything together. She is the mediator. The ambassador to this harmonized, egg-studded colony of greens deliciousness.

Winter Mache Salad, Crispy Egg, and Homemade Garlic Ranch Dressing
Prep Time: 5 minutes
Cook Time: 2 minutes
Servings: 1
Difficulty: Easy
Ingredients:
1 thick slice applewood bacon; chopped roughly
1 whole egg
Mache lettuce leaves or any other baby leaf blend
Red onion; sliced thinly
Salt and pepper
Homemade garlic ranch dressing
Cooking Instructions:
In a small fry pan set over medium-high heat, brown the bacon bits. While this happens, begin construction of your salad. Place desired amount of mache lettuce leaves onto a big plate or bowl. Season with salt and pepper. Disperse thinly sliced red onion throughout.
When the bacon is done cooking, set aside, leaving behind the grease. Fry the egg, seasoning with salt and pepper, and then cook almost all the way through. Finish by flipping it over to cook over easy. Set aside.
Dress the salad lightly with the homemade garlic ranch dressing. Adorn the salad with the fried egg and scatter the bacon bits all around.
Eat.

OMG how did I not see this earlier?!! Just printed the recipe and have to make it ASAP. Unfortunately my husband despises ranch- but I love it… will have to kick him out of the house for this one! I’ve been craving a poached egg that will go great on this salad… ok twist my arm… I’ll fry it in the bacon fat instead! hehe

The only eggs I have eaten on a salad is hard boiled. I have over the past year started trying, and enjoying, over easy eggs. I have seen this on “top chef” but did not know if a runny egg on a salad would taste good or not? I think the bacon would definitely tie this together very well, and am heading to the kitchen right now to see what this taste like! Thanks!
